When I tested the cake for doneness, a toothpick in the center came out clean; but when the cake was cooling it developed a sink hole. Why is that?

Hi Vivian, I am sorry to hear that your cake sunk in the middle. It is quite unusual for a cake to sink in the middle when the tester removes clean and I have not seen or heard of this problem with the particular cake. It's difficult to diagnose without more information but here are some ideas. I suggest the next time you bake any cake, you test in a few spots. Was the cake baked in a 9inch pan or smaller? Are you sure the oven temperature is correct; that is do you have an oven thermometer in the oven. Was the 'sinkhole' a dip or an actual hole. Was the batter unbaked in that area or was it moister than the rest of the cake? I hope you were able to overcome the look of the cake with icing or a glaze. If the center was actually uncooked, the thing to do is to allow the cake cool completely and cut the center out. I hope this helps and that you will try again. Fran

Lol. I was very excited about this cake after I listened to your end of the year dessert talk. I guess I need to enroll in this program, because my baking is not good. It was ugly but delicious. :)
