I know, the name is bold, but this tomato sauce really is amazing — it's full of flavor, yet it uses only 3 ingredients.

Chef's notes

Thank you so very much to Avant Garden (in New York City) and chef Andrew D'Ambrosi for this amazing recipe. Here is a video of the chef making the sauce, courtesy of Fork+Plate. Note this sauce goes well with any number of pastas — whichever one you choose, be sure to serve it with toasted bread crumbs. To make them, heat a large fry pan over medium heat and add about 1/4 cup of olive oil, followed by 1 to 1 1/2 cups of fresh bread crumbs. Stir constantly, unit the breadcrumbs are golden brown — about 3 to 5 minutes. Remove from the heat and season with salt and freshly ground black pepper. If desired, other seasoning such as parsley or oregano can also be added. To understand the magic of good bread crumbs, here's a good article called "Mighty Mighty Breadcrumbs".

This recipe makes no mention of type of tomato, removing skins or straining seeds!

Would this work if you roasted the garlic in the oven then combined with the tomatoes?

Hi Lorelei! Thank you for you question. You can definitely do that. Whole roasted garlic tends to be sweeter in flavor than sautéed garlic. Enjoy. Lauren

What can I substitute for oil? My husband is diabetic and we are to avoid all kinds of processed oil. Can I roast it instead of fry?

HI Susana, thank you for your question. You can roast the garlic and then add it or you can sauté the minced garlic in a bit of vegetable stock until is softens and then add the tomatoes. Another way is to add the minced garlic to the simmering tomatoes but you might want to dial back the garlic quantity since it will be much stronger without being cooked first. Lauren

When canning you have to be sure that your ph is acid. Garlic and oil will decrease acid. If not add acid or pressure can it.

This is the absolute BEST recipe and method EVER! It takes a LOT of tomatoes but is so very worth it! I'm wondering if after cooking and cooling if it's ok to store in a plastic container in the freezer?

HI Lakiesha, Yes, this sauce should freeze beautifully. Enjoy! Cheers, Sandy

I made this last night with the last of my garden tomatoes. Wonderful! We used it as a dip for some cheesy garlic bread. Amazed at how easy and relatively quick this was, as I did turn up the heat a bit and stirred constantly. Love the technique. My new go-to!
