Tender salad greens and sautéed wild mushrooms are tossed with a soy-sesame vinaigrette. Topped with crunchy shoestring potatoes, this outstanding salad was adapted from the Rim Rock Cafe in Whistler, B.C.

Tried this tonight with great friends. AMAZING. Everybody loved it. I have to print the recipe for them now.... I just did the mushrooms and tossed it into some greens; nothing else and it was fabulous. What a great find; thanks so much for sharing.

The vinaigrette for this salad is so good that I literally dream about it sometimes. It is so good in fact, that I often double or triple the recipe so I can use it throughout the week. I am so happy that I have some in my refrigerator right now :-)

Made this for lunch today, and it paired beautifully with roasted chicken thighs, pickled green beans, and spinach pie. I really can't recall when we've had such a diverse, but truly enjoyable lunch. Thanks for the recipe. I have uploaded a photo of the final result.

So glad that you liked it Leigh. I know this salad — the vinaigrette in particular, is one of our favorites, and it's surprisingly quick to make (again, the vinaigrette, not the whole salad). Cheers!

What's the best non-alcoholic Substitute for miring?

Hi Arwa! As far as this recipe goes, it is such a small amount you could simply omit it. Mirin is hard to replicate exactly- it is sweet and acidic. In general when replacing Mirin, I would combine a little rice vinegar and a bit of agave. Hope that helps. Happy cooking. Lauren
