Tossed with a tangy bacon vinaigrette, this scrumptious German potato salad is best served slightly warm.

Chef's notes

Try to purchase medium-sized potatoes. Larger potato slices will be harder to toss and may break up. Smaller potato slices look nicer too. Though this salad is best when served slightly warm, it can be served at room temperature as well. It just cannot be served cold as the bacon fat will solidify and will not be pleasant to eat.

In step 4 of the recipe, the ingredients list red onion, but there's no mention of red onion in the description. Is that referring to the shallots?

Good catch. The recipe has been updated. Thinly slice the red onion and only use a bit to taste as it can often be overpowering. Cheers!

I usually have great results with Rouxbe recipes but this one wasn’t so good for me. I followed the recipe to the letter. The potatoes were cooked perfectly but the dressing flavours seemed unbalanced and tasted too much mustard and not enough tang. I wonder if using white vinegar instead of white wine vinegar would be better. And cutting back the mustard some might help too. My friend liked it better than I did and liked the mustard but overall thought it lacked a bit of flavour. Then the big surprise,,,, the next day, cold from the fridge the potatoes were delicious. The congealed fat wasn’t even noticeable. The flavours seemed to be better balanced and the mustard not so strong. I won’t make it again as written though.
