This is based on my mother's brilliant recipe, very rich and flavourful, and easy to make. Note: Use the tinned lobster, rather than fresh. There is a difference in taste and texture, and the tinned lobster is definitely better in this application.

Chef's notes

Rouxbe Homework Assignments No 1 To warm the bowls, place them in the microwave for 1 minute, just before serving. Option: You could make a superb chicken stock completely from scratch, but because the flavour in this soup is so robust (thanks to the paprika, cream, sherry and sweet lobster meat), I think the extra time and effort would be wasted here. (For the real thing, see http://rouxbe.com/recipes/850/text) Also: I've made this soup with shrimp, instead of lobster. It's just as delicious, and quite a bit cheaper! And if you've saved your shrimp shells in the freezer, you can really enhance the flavour of the stock by adding them during Step 1.

Tried this recipe for a new year's eve party....amazing reviews. My guests thought I had bought it at a store until I showed them the lobster tin that I bought.....lol. This recipe definetly needs a video. One suggestion...sherry can be used liberally.

Glad you liked it Claudio. As for doing a video, we are currently working on some lessons on soups, so stay tuned!
