Toast the Szechuan peppercorns for 2 or 3 minutes in a small saucepan over medium heat. Then set aside to cool. Once cool, grind in a spice grinder or mortar and pestle. In a food processor purée the garlic and ginger. Then add the miso, mirin, rice wine vinegar, sesame seeds, seasoning, along with the Szechuan peppercorns and blend everything together. To finish slowly add the sesame and grapeseed oil and blend until everything is incorporated. Serve over a salad or use as a sauce with chicken, fish or tofu.

This Miso dressing is wonderful on salads but would also go nicely on a piece of salmon, chicken or tofu. Any leftovers will keep for quite a few days in the refrigerator.

I wasn't sure I would like this, but it is really good. It makes quite a bit but that's okay cause it's so yummy. I did the salad bar tip and my kids loved it.
This one is very yummy - not only on salads but I did a salmon on the BBQ and poured it all over it - it was excellent. Make a big batch and store it in the fridge for the week ahead. Good one guys!!
