Rustic roasted sweet potatoes with green onions.

Step 1: Making the Sweet Potatoes

Making the Sweet Potatoes
  • 4 medium sweet potatoes - can substitute with 3 large
  • 3 green onions
  • 1/4 tsp fresh cracked black pepper
  • 1 tsp Kosher salt - can substitute with 1/2 tsp table salt
  • 2 tbsp unsalted Butter

Preheat oven to 425 degrees Fahrenheit.

Puncture the sweet potatoes with a fork, place on a parchment lined baking tray and bake for 35 to 50 minutes depending on the size of the sweet potatoes.

When a fork goes into the sweet potatoes with ease they are ready. Allow to cool for 5-10 minutes or until you can handle them.

While the sweet potatoes cool, finely chop the green onions.

Slice the sweet potatoes lengthwise while still warm and peel the skin away and discard.

Place the potatoes into a bowl, add the butter, the green onions the seasoning and toss. Serve immediately.

Notes

By baking the sweet potatoes whole, the skin comes off effortlessly while still warm.

Make it on the SLY

I made this recipe for my girlfriend and she doesn't even like sweet potatoes. When I served it i just didnt mention exactly what it was. She LOVED it.

It is truly easy, pretty and fresh tasting-not like overcooked rubber sweet potatoes of our childhood.

Staple Side Dish

From the first time we tried it, we fell in love with this recipe and you'll find it on our plates at least once a week!

It makes a really good side dish for pretty much anything that we can think of, but paired with slow cooked spare ribs has been our favourite.

It looks good but...

my sweet potatoes didn't caramelize. I let it cook until fork tender.

Camamelizing...

Depends a great deal on the amount of natural sugar in the sweet potatoes... were they good though?

They were good.

Although it didn't caramelize. They were good. I wish that it did caramelize so it could taste much sweeter.
