I'm glad you liked this recipe and thanks for trying it out. I agree, I could have added a few more chicken thighs - even without adjusting the other ingredients. We like a lot of sauce, so we didn't mind.
I have also heard that curries like this freeze well, but I never have enough leftovers to try that out! It's good to know you got great results by substituting coconut milk. Aside from another Indian dish, I would serve naan bread with it - we like our carbs. Maybe someone out there has a great naan recipe they'd like to share.
This salsa was very simple to make and delicious with the lager beer! I like when salsas aren't cold, as the flavors really come through. It was perfect with our cheese and chorizo quesadillas.

Thanks for these "French Tacos". I normally find endive too bitter to enjoy, however, you can't go wrong with the combination of blue cheese and walnuts. It's one of my favorites, so I thought I'd give it a try. The dates add a nice touch of sweetness. It's a great combination of flavors, with the endive offering a nice, crunchy texture.
I just baked these off and they were fantastic. Even though I am a chocoholic, I added just over a cup of chocolate chips and they were still incredible. Thanks for the recipe.
Tonight I made this dish and used half chicken breast and half paneer. I added the paneer at the very end of Step 1. I covered the pot again and let it cook in the onion mixture for another 15 minutes or so for it to soak up all of the flavor. I also squeezed a bit of fresh lime juice over each serving at the end and served it with plain basmati rice and cumin pappadums.
